The Gulistan, by Persian poet Sa'di is excellent.
Apart from Sa'adi, the names of Rumi and Hafiz spring to mind, both Iranian.
Then Ibn Arabi, Junaid, Sanai and Mulla Sadra, are also quite prominent.
